Island Interview: Randy & Maya Chat Maya’s To Go Updates and Recipes

Although St. Barths is free from COVID and there will be testing procedures, we anticipate many guests will want to know: Are there any changes in Mayas To Go?

At Maya’s To Go we have a plexiglass barrier around the cash register. We follow the French protocols with masks and gloves where appropriate. Our credit card machine is contactless up to €50.00 and we supply gloves to our clients at the entry if they want them. We are very conscious of our responsibility to our clients and to our employees.

The wonderful Maya herself!

What’s your idea of a perfect “first night dinner” at the villa after a long day of travel?

To me it would be grilled local Mahi, rice and broccoli with a slice of Maya’s chocolate cake for dessert. Not everyone wants something so simple. We have several dishes prepared daily. [Editor’s Note: The chocolate cake is out of this world.

Say we want to spend the day at the beach and have a picnic packed, can we order that in advance? What would be your choice for an ideal beach lunch?

Yes, picnics can be ordered the day before to be picked up or delivered. Food on the beach is about delicious convenience. Sandwiches are easy and Maya makes great chocolate chip cookies and fruit salad. There are also lots of salads in our daily menus to choose from. [Editor’s Note: Once you have one chocolate chip cookie, you may want five; consider yourself warned]

For the guest who can’t come to St. Barths this summer, what are some of your favorite “5 ingredients or less” summer dishes?

A salad with arugula and thinly sliced zucchini with a citronette and a spaghetti with Meyer lemon zest sauce.

What do you miss most about your clients? What do you love most about having the island to yourselves?

I miss the rapport with our clients at the restaurant. I miss seeing the people who have come to the restaurant summer after summer and seeing their children grow up. I miss their excitement at returning to St. Barth.

The island has been very quiet and we have taken advantage of having it all to ourselves. There has been time to walk all over, to see places we haven’t been in years. The beaches are never crowded but it’s nice to have Saline without another soul.
